Truly Awesome Chocolate Chip Cookies

Preservative-free cookies taste like homemade

I recently tried Kroger’s Truly Awesome Chocolate Chip Cookies. I think that they may be the best store-bought chocolate chip cookies I’ve ever eaten. Chocolate lovers won’t be disappointed in these cookies as there are plenty of chocolate chips in every bite, unlike with many store-bought chocolate chip cookies.  I like the fact that these cookies are made without preservatives.

The cookies have a homemade taste, especially if you warm one up for about 15 seconds in the microwave. Yummy. These cookies are perfect with a cold glass of milk, according to my husband. I can’t drink milk, so I guess I have to take his word for it.

Since these cookies are a Kroger brand, they’re only available at Kroger food stores, which includes stores such as Ralph’s, Smith’s and Fred Meyer. I shop at Smith’s and they had a big display of these cookies when they first became available. I didn’t buy any then, as it was around Christmas time, and I was in the midst of doing my Christmas baking. I had more than enough homemade cookies around the house, I didn’t need any store-bought ones to add to the mix. A couple of weeks ago, during my bi-monthly trip to the grocery store, I was in the cookie aisle and noticed these cookies on the shelf. They were on sale at two boxes for five dollars, so of course I bought two boxes.  They sure didn’t last long at my house.

I think my biggest complaint with the cookies is that there are only eight cookies to the box. I don’t know what the regular price of these cookies is, but $2.50 for eight cookies is a little steep for me, so I probably will only buy these as a special treat.

Sugar Wafers

These cookies have become a staple in my cookie jar

I’ve become addicted to sugar wafers, especially the chocolate ones. I don’t know if it’s because I’ve gotten older, or what it is. I remember my mother eating sugar wafers whenever she wanted cookies when she was about the age I am now. Maybe it has something to do with menopause or hormones.

I’ve always liked sugar wafers, I just never ate them as much as I eat them these days.  I bought some a couple of months ago at the dollar store, and ate the package in about a day. Since then, I get several packages every time I am at the dollar store if they have them. I prefer the ones they sell there versus the ones they sell at Wal-Mart and the grocery store. They have less sugar in them for one thing. The ones at the dollar store have 6 grams of sugar per serving (2 wafers), while the ones they sell at the grocery store and elsewhere have 18 grams of sugar per serving. Since I usually eat about 10 wafers at a time, less sugar is better.

I prefer the chocolate flavored wafers, but I like the vanilla sugar wafers as well. I’ve gotten into the habit of going to the store every morning near where I work and buying a pack of vanilla sugar wafers for breakfast. I’m not a big fan of the strawberry wafers, but I’ll eat them if I can only get a variety pack, and not a single-flavor pack of cookies.

Maybe I like the sugar wafers so much these days because they are ‘safe’. I am severely lactose-intolerant, and cannot handle anything with even a little real dairy in it. The sugar wafers I’ve been eating contain powdered milk, which doesn’t upset my stomach. Sugar wafers have become a staple in my cookie jar.

Three Ingredient Peanut Butter Cookies

So easy and quick to make

My husband loves peanut butter cookies. He doesn’t eat a lot of sweets anymore, but if there are peanut butter cookies anywhere in the vicinity, he’ll have a handful, or two. He especially loves the peanut butter blossoms, with the Hershey’s kiss on top of the cookie.

I love to bake, and it used to be that when I baked, I made everything from scratch. Nowadays, I generally use a mix, unless I’m baking for the holidays. I still make everything from scratch for my holiday baking, but if it’s general, every day baking, I use a mix because it’s faster. However, once I heard about these easy, three-ingredient peanut butter cookies, it’s just as fast to make these cookies from scratch as it is to use a mix. They are better, too.

When we went to San Diego a couple of years ago to visit family members, we went to my cousin Steve’s house for Easter dinner. My cousin Dawn brought peanut butter blossoms. They were the best peanut butter cookies I’d ever eaten. I begged and begged her for the recipe, and she finally gave it to me. Not because it was a secret recipe, she would just forget to pass it on.

These cookies are made from only three ingredients; four if you count the sugar to roll them in, and the ingredients are things you probably already have in your pantry. The next time your child comes to you the night before you are to bring cookies to his or her class party, you can whip up a quick batch of these cookies.

Preparation:

Preheat oven to 350 degrees.

Ingredients:

  • 1 cup of peanut butter
  • ½ cup of honey
  • 1 egg
  • 1 to 2 tablespoons granulated sugar (optional)

Directions:

  1. Heat the peanut butter in the microwave so that it is soft but not completely melted.
  2. Stir peanut butter, egg, and honey until completely mixed together.
  3. Chill dough for at least 30 minutes in refrigerator
  4. Remove chilled dough from refrigerator and form into 1-inch balls.
  5. Roll balls in sugar and place two inches apart on ungreased cookie sheets.
  6. Flatten balls with the bottom of a glass dipped in sugar; or make crisscross patterns using a fork.
  7. Bake cookies for 8 to 10 minutes at 350 degrees.
  8. Remove from oven and let set on cookie sheets before removing to a wire rack to cool completely.

Recipe makes approximately 2 dozen cookies.

Tips:

  • Use creamy or smooth peanut butter for best results.
  • The amount of honey used can be adjusted for sweetness.
  • As an alternative to flattening the cookies before baking, place dough balls on the cookie sheet after rolling in sugar and let the dough spread while baking. Upon removing from the oven, immediately place an unwrapped Hershey’s kiss or peanut butter cup on top of each cookie.

Add salted peanuts to traditional chocolate chip cookie for a sweet n salty treat

Do you love the combination of sweet and salty as much as I do? The combination of sweet and salty sensations is a common mixture in many of the foods we eat. Adding a pinch of salt to sweet foods, or a dash of sugar to salty foods can help brings flavors to the forefront and make the foods tastier.

In general, people have five different taste sensations - sweet, salty, sour, bitter and savory. Taste is a sensory function of the central nervous system, and the buds that determine how we perceive food to taste are located primarily on the tongue, but are also found on the epiglottis and soft palate, or roof of the mouth. The taste buds that sense sweet and salty are located at the front of the tongue.

A salty taste is created with the presence of sodium ions or other alkaline such as potassium. For a food to taste sweet, there must be a presence of sugars, such as fructose, glucose or sucrose.

Taste buds change as people age, so some tastes enjoyed as a child may not be pleasant to adults. Illness, medications and smoking can also alter the sense of taste. Some people prefer salty snacks while other people have a strong sweet tooth. Still others find the combination of sweet and salty makes a tasty treat. Some examples of sweet and salty snacks are kettle corn, trail mix, and chocolate-covered pretzels or nuts.

One of my favorite sweet and salty creations is these chocolate chip cookies with salted peanuts.

Preparation:

Preheat oven to 350 degrees. Grease baking sheets with shortening, margarine or cooking spray.

Ingredients:

  • 1 1/2 cups shortening
  • 1 cup granulated sugar
  • 1 cup firmly packed brown sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 3 3/4 cups flour
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 1/2 cups semisweet chocolate chips
  • 1 1/2 cups salted peanuts

Directions:

  1. In large bowl, cream the shortening, granulated sugar and brown sugar. Add eggs, one at a time, beating well after adding each egg. Stir in vanilla.
  2. Combine flour, baking soda and salt. Flour does not need to be sifted. Gradually stir into creamed mixture. Mix well. Add chocolate chips and peanuts, stirring mixture until chocolate chips and peanuts are evenly distributed.
  3. Drop cookie dough by tablespoonfuls 2 inches apart onto prepared baking sheets.
  4. Bake at 350 degrees for 10 to 12 minutes, or until lightly browned. Remove from baking sheets onto wire racks to cool.

Notes:

  • Bring eggs to room temperature before adding to mixture
  • Use all-purpose white flour for best results. The flour does not need to be sifted.
  • Milk chocolate chips may be substituted for semisweet chips.

This recipe makes approximately 10 dozen cookies.

Mint Chip Sugar Cookies

A minty twist on classic cookies

I decided to try something a little different this holiday.  Not that these cookies are anything spectacular or mind-blowing, but it was something different for me.

Instead of making plain, boring sugar cookies, I decided to experiment. I added a package of mint chips to the mix, and made mint chip sugar cookies. They turned out pretty well, if I do say so myself. And, they were a hit with the office gang, and on Christmas Day with the family.

Preparation:

Preheat oven to 375 degrees.

Ingredients:

  • 2 ¾ cups flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 cup (2 sticks) butter or margarine, softened (not melted)
  • 1 ½ cups granulated sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 package mint chips
  • White decorator sugar (optional)

Directions:

In small bowl, mix together flour, baking soda and baking powder. Set to one side.

In large bowl, cream together butter and sugar until smooth.

Beat in egg and vanilla.

Slowly blend in dry ingredients. Mix completely.

Fold in mint chips.

Drop dough by rounded teaspoonful onto an ungreased cookie sheet. Sprinkle with white decorator sugar if desired.

Bake at 375 degrees for 8 to 10 minutes, or until lightly golden brown.

Let stand on cookie sheet 1 to 2 minutes, until set. Remove to wire rack to cool completely.

The recipe makes approximately 4 dozen cookies.

Tips:

For quick cookies, you can use a pre-packaged sugar cookie mix, add the mint chips, and bake as indicated on the package.

Instead of mint chips, add mint M&M’s. The cookies are equally awesome!

To soften butter or margarine straight from the refrigerator, place unwrapped sticks in a microwave –safe bowl and microwave for 10-15 seconds.

Chocolate Chip Meringue Drops

A sweet, low-fat treat

I first discovered these wonderful cookies when I was in junior high school. Our neighbors across the street from us had kids my brother’s and my ages, and we spent a lot of time at each other’s homes. Our friends’ mother always had these cookies in the cookie jar.

Meringue is a sweet, low-fat treat made of egg whites and sugar. Meringue is best known as pie topping and candy, but it makes a great cookie as well. Making a good meringue can be tricky.

Tips for making meringue:

Eggs should be cold and fresh.

Separate the eggs making sure there is no trace of yolk in the whites when separated.

Bring egg whites to room temperature prior to beating.

It is important to not under beat the egg whites. Use an electric mixer for best results. Beaten egg whites should form a stiff peak when making a proper meringue. It is equally important not to over beat the egg whites. Over beating can cause the meringue to spread and flatten when baking.

These tasty, low-fat cookies are easy to make, and are sure to be a hit with your family.

Preparation:

Preheat oven to 250 degrees.

Lightly spray or grease baking sheets and set them aside.

Ingredients:

2 egg whites

1/4 teaspoon cream of tartar

3/4 cup sugar

1/8 teaspoon vanilla extract

1 – 12 ounce package chocolate chips

Directions:

  • Beat egg whites in a large bowl until foamy.
  • Add cream of tartar to egg whites and continue beating until a soft peak forms.
  • Gradually add sugar, beating until stiff peaks form.
  • Mix in vanilla. Fold in chocolate chips.
  • Drop by rounded teaspoonful onto prepared baking sheets.
  • Bake at 250 degrees for 30 to 35 minutes, or until dry to the touch.
  • Remove from baking sheets immediately after removing from oven, and place on wire racks to cool.

Once cool, store in an airtight container.

Makes approximately 2 ½ dozen cookies.

To make the cookies festive for Christmas, substitute mint chocolate chips for regular chocolate chips, and add a few drops of green food coloring to make a light, minty treat.

For the Holidays

A quick way to the heart of a cookie lover is these amazing chocolate drop cookies.  Their warm, melty scent fills the air with all kinds of happy thoughts. The recipe is over 50 years old and has been passed down from generation to generation with great success creating a family favorite.  They have been baked in my household since I was a little girl watching my grandmother in the kitchen.

These delicious cookies also make for a great gift whether it is around the holidays or simply because you want to say thank you. Just place in a decorative air tight container, put a bow on it and you have a memorable gift.

Holiday Chocolate Drop Cookies

 Preheat oven to 350®.

Ingredients:

½ cup butter

1 ¼ cups packed brown sugar

2 eggs

¼ cup powdered cocoa

1 ½ unsifted flour

½ tsp. baking soda

¼ tsp. salt

1 tsp. vanilla

½ cup snipped dates

1 cup raisins

½ cup chopped walnuts

 

Directions:

 

1)      Cream butter and sugar together in a large bowl.

2)       Add eggs then beat well.

3)      In a separate bowl combine, cocoa, flour, baking soda, and salt until well blended.

4)      Blend flour mixture and creamed mixture together.

5)      Add vanilla, dates, raisins, and walnuts into the mixture.

6)      Chill cookie dough for 30 minutes.

7)      Drop by spoonfuls onto lightly greased baking sheet.

8)      Bake at 350® for 8-10 minutes or until set.

9)       Remove from cookie sheet and cool on wire racks.

 

This recipe makes approximately 3 dozen cookies.
